  • 1 cup cream cheese softened
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries hulled and chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a mixing bowl, beat the cream cheese and butter together until smooth.
  3. Gradually add the sugar and continue to beat until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, whisk together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the vanilla extract and chopped strawberries.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
