  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk can substitute with almond or oat milk
For the Strawberries
  • 2 cups fresh strawberries ripe and juicy
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar for macerating
For the Frosting
  • 8 oz cream cheese
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream can substitute with coconut cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing them with butter or non-stick spray, then dusting with flour.
Mixing Cake Batter
  1. Mix the dry ingredients in a large bowl: flour, baking powder, and salt. Whisk together until well combined.
  2. Cream together the butter and sugar in a separate bowl until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Combine the wet and dry mixtures gradually, alternating with milk until just mixed.
  5. Fold in fresh strawberries gently.
Baking
  1. Pour the batter into your prepared pans, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
