Ingredients
  

Chicken and Seasoning
  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning store-bought or homemade
  • 1 can diced tomatoes 14.5 oz, with green chilies optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Taco Toppings
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup fresh cilantro chopped, optional

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix together the chicken broth, olive oil, taco seasoning, diced tomatoes, garlic powder, onion powder, cumin, salt, and black pepper.
  3. Pour the mixture over the chicken in the slow cooker.
Cook the Chicken
  1. Cover and cook on low for 6 hours or on high for 3 hours until the chicken is cooked through and shreds easily.
Assemble the Tacos
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker and mix with the juices.
  3. Warm the corn tortillas in a skillet or microwave.
  4. Assemble the tacos by placing shredded chicken on each tortilla and adding desired toppings.
