Cooking the Rice
- In a pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened.
- Add the minced garlic, cumin, and paprika, and cook for another minute until fragrant.
- Stir in the rinsed rice and cook for 2 minutes, stirring frequently.
- Add the water and salt, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender.
Combining Ingredients
- Once the rice is cooked, remove from heat and fluff with a fork.
- Stir in the drained black beans and mix well. Adjust seasoning if necessary.
- Serve warm, garnished with fresh herbs if desired.
