  • 2 medium Fresh peaches ripe and juicy
  • 1 loaf Baguette lightly toasted
  • 2 tablespoons Olive oil extra virgin
  • 2 tablespoons Balsamic glaze for drizzling
For the Whipped Ricotta
  • 1 cup Ricotta cheese fresh
  • 1 tablespoon Honey
  • 1 teaspoon Lemon zest
  • 1 pinch Salt
For Garnish
  • 1 handful Fresh basil leaves torn
  • to taste Cracked black pepper

Preparation
  1. Slice a fresh baguette into ½-inch thick pieces. Arrange them on a baking sheet and brush lightly with olive oil.
  2. Preheat your oven to 400°F. Place the baking sheet in the oven for about 5-7 minutes, until the bread is toasted and slightly golden.
  3. In a mixing bowl, combine fresh ricotta cheese, a drizzle of honey, and a pinch of salt. Use a hand mixer or whisk until smooth and creamy, which takes about 2-3 minutes.
  4. Wash and thinly slice ripe peaches, aiming for uniform pieces.
  5. Spread a generous layer of whipped ricotta on each toasted slice of bread. Top with peach slices and sprinkle with fresh basil.
  6. Arrange your Peach Bruschetta with Whipped Ricotta on a platter and enjoy while the bread is still warm.
