Ingredients
  

Salad Base
  • 1 cup orzo pasta uncooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Orzo
  1. Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente.
  2. Drain the orzo in a colander and rinse under cold water to cool.
Make the Dressing
  1. In a mixing bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large mixing bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  2. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
