  • 4 medium ripe tomatoes finely chopped
  • 2 medium bell peppers red or green, finely chopped
  • 1 medium onion yellow, finely chopped
  • 2 cloves garlic freshly minced
For the Seasoning
  • 1 teaspoon cumin essential for authentic Moroccan taste
  • 1 teaspoon paprika sweet or smoky varieties
  • to taste salt season as you go
  • to taste pepper season as you go
For a Touch of Garnish
  • 2 tablespoons olive oil drizzle before serving
  • 2 tablespoons fresh cilantro or parsley chopped finely

Method
 

Preparation
  1. Start by finely chopping your bell peppers and tomatoes into uniform pieces, about ¼ inch thick.
Cooking
  1. In a large skillet, heat a splash of olive oil over medium heat. Add chopped onions and sauté for about 5-7 minutes until soft and translucent.
  2. Add the chopped bell peppers and cook for another 5 minutes, stirring occasionally until they soften.
  3. Stir in the diced tomatoes along with cumin and paprika. Allow to simmer for about 10-15 minutes until thickened.
  4. Taste and adjust seasoning with salt and pepper as needed.
  5. Ladle into a serving bowl while warm and garnish with fresh cilantro or parsley.
