Ingredients
  

Pastry Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
Filling
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh fruit e.g., berries, sliced kiwi

Method
 

Make the Pastry Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, and sugar. Mix until crumbly.
  3. Add egg yolk and cold water, mixing until a dough forms.
  4. Roll out the dough on a floured surface and cut into circles to fit the muffin tin.
  5. Press the dough circles into the muffin tin and prick the bottoms with a fork.
  6. Bake for 15 minutes or until lightly golden. Let cool.
Prepare the Filling
  1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Fill each cooled tart shell with the cream cheese mixture.
  3. Top with fresh fruit as desired.
  4. Chill in the refrigerator for at least 30 minutes before serving.
