Ingredients
  

Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Salad Base
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup carrots shredded
  • 1 cup bell pepper diced
Protein
  • 1 cup chickpeas cooked
  • 1 cup grilled chicken sliced
Toppings
  • 1/2 cup feta cheese crumbled
  • 1/4 cup walnuts chopped

Method
 

Prepare the Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper.
Layer the Ingredients
  1. In each mason jar, start by adding 2 tablespoons of the dressing at the bottom.
  2. Layer the salad ingredients starting with the heartier vegetables like cucumbers and carrots, followed by cherry tomatoes, mixed greens, and protein.
  3. Top with feta cheese and walnuts.
Seal and Store
  1. Seal the mason jars tightly and store in the refrigerator for up to 5 days.
