Mango Mousse

Ingredients
  

Mousse Base
  • 2 ripe mangoes peeled and diced
  • 1 cup heavy cream chilled
  • 1/4 cup sugar adjust to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon gelatin dissolved in 2 tablespoons of water
Garnish
  • 1/4 cup whipped cream for topping
  • 1 tablespoon mint leaves for garnish

Method
 

Prepare the Mango Puree
  1. In a mixing bowl, blend the diced mangoes until smooth.
Make the Mousse
  1. In a separate bowl, whip the heavy cream and sugar until soft peaks form.
  2. Gently fold the mango puree and lime juice into the whipped cream.
  3. Add the dissolved gelatin and mix until combined.
Chill and Serve
  1. Spoon the mousse into serving glasses and refrigerate for at least 2 hours.
  2. Before serving, top with whipped cream and garnish with mint leaves.

Notes

For a vegan version, substitute heavy cream with coconut cream and gelatin with agar-agar.
