Ingredients
  

Rice
  • 1 cup Basmati rice Rinsed and drained
Spices
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 2 green chilies Chopped Adjust to taste
Other Ingredients
  • 2 tablespoons Oil Vegetable or mustard oil
  • 1 lemon Juice Freshly squeezed
  • 1/4 cup Peanuts Roasted
  • 2 tablespoons Coriander leaves Chopped, for garnish

Method
 

Cooking the Rice
  1. In a pot, add 2 cups of water and the rinsed basmati rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked. Fluff with a fork and set aside.
Preparing the Lemon Rice
  1. In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  2. Add chopped green chilies and turmeric powder, and sauté for a minute.
  3. Stir in the cooked rice, lemon juice, peanuts, and salt. Mix well to combine all ingredients.
  4. Garnish with chopped coriander leaves and serve warm.
