Method
Prepare the Marinade
- In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and pepper.
Marinate the Chicken
- Place the chicken breasts in a resealable bag or dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
Cook the Chicken
- Heat a skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side, or until cooked through.
Add Toppings
- In the last few minutes of cooking, add cherry tomatoes and mozzarella cheese on top of the chicken. Cover the skillet to melt the cheese.
Serve
- Garnish with fresh basil and serve hot.
