Ingredients
  

Chicken
  • 4 pieces Chicken Breasts boneless and skinless
Marinade
  • 1/4 cup Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper freshly ground
Toppings
  • 1 cup Cherry Tomatoes halved
  • 1 cup Mozzarella Cheese shredded
  • 1/4 cup Fresh Basil chopped

Method
 

Prepare the Marinade
  1. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and pepper.
Marinate the Chicken
  1. Place the chicken breasts in a resealable bag or dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
Cook the Chicken
  1. Heat a skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side, or until cooked through.
Add Toppings
  1. In the last few minutes of cooking, add cherry tomatoes and mozzarella cheese on top of the chicken. Cover the skillet to melt the cheese.
Serve
  1. Garnish with fresh basil and serve hot.
