Ingredients
  

For the Chicken
  • 1 lb Boneless, skinless chicken thighs
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
For the Bowls
  • 2 cups Cooked quinoa or rice
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 small Red onion thinly sliced
  • 1 cup Feta cheese crumbled
For Garnishing
  • 2 tbsp Fresh parsley or dill chopped
  • 1 cup Tzatziki sauce

Method
 

Preparation
  1. Marinate your chicken in olive oil, lemon juice, garlic powder, and oregano for at least 30 minutes.
  2. Preheat your grill or skillet to medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until golden brown and cooked through.
  3. Chop fresh vegetables like cucumbers, tomatoes, and red onions.
  4. Prepare the Tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt in a bowl.
  5. Assemble the bowls by layering quinoa or rice at the bottom, topped with sliced chicken, fresh veggies, and tzatziki sauce.
