Crockpot Mexican Chicken

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup salsa your choice of mild, medium, or hot
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 packet taco seasoning
  • 1 cup chicken broth

Method
 

Cooking Instructions
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Pour the salsa over the chicken.
  3. Add the black beans, corn, and taco seasoning on top.
  4. Pour the chicken broth over all the ingredients.
  5. Cover and cook on low for 4-6 hours or until the chicken is cooked through and shreds easily.
  6. Once cooked, shred the chicken with two forks and mix everything together.
  7. Serve in tacos, burritos, or over rice as desired.
