Ingredients
  

Marinade
  • 1 cup coconut milk
  • 1/4 cup lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey optional
Chicken
  • 4 pieces chicken breasts boneless, skinless
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine coconut milk, lime juice, garlic, ginger, salt, black pepper, and honey. Mix well.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Serve
  1. Remove chicken from the grill and let rest for a few minutes.
  2. Garnish with chopped cilantro and serve with lime wedges.
