Marinate the Chicken
- In a mixing bowl, combine coconut milk, lime juice, garlic, ginger, salt, black pepper, and honey. Mix well.
- Add chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Grill the Chicken
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Serve
- Remove chicken from the grill and let rest for a few minutes.
- Garnish with chopped cilantro and serve with lime wedges.
