Pancake Batter
  • 2 cups shredded cabbage green or savoy cabbage
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 cup milk or plant-based milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Batter
  1. In a mixing bowl, combine the shredded cabbage, flour, beaten egg, milk, salt, and black pepper. Mix until well combined.
Cook the Pancakes
  1. Heat olive oil in a frying pan over medium heat. Pour a ladleful of batter onto the pan and flatten slightly.
  2. Cook for 3-4 minutes on each side or until golden brown. Repeat with remaining batter.
Serve
