  • 4 cups Vegetable broth opt for low-sodium
For the Seasoning
  • 1 tablespoon Olive oil helps sauté garlic and onion
  • 1 tablespoon Chili powder adjust according to spice preference
  • 2 tablespoons Lime juice freshly squeezed
For Serving Suggestions
  • 1/4 cup Fresh cilantro sprinkle on top for freshness
  • 1 medium Avocado sliced for creaminess

Method
 

Preparation
  1. Rinse the black beans under cold water, removing any debris and stones.
  2. Soak the beans overnight in a large bowl with enough water to cover them by a few inches.
  3. Drain the soaked beans and transfer them to a large pot. Add fresh water until it covers the beans by about an inch.
Cooking
  1. Simmer on medium heat, bringing the pot to a gentle boil before reducing to low. Let them cook for about 1 hour, or until tender but not mushy.
  2. Season with salt, garlic powder, and cumin during the last 15 minutes of cooking.
  3. Serve warm in bowls, garnished with chopped cilantro and a squeeze of lime.
